PINEAPPLE UPSIDE DOWN CAKE

A pineapple upside down cake is a cake made with pineapple ring placed at the bottom of the cake pan and flipped over after baking.

According to Wikipedia pineapple upside down recipe was first discovered as a result of the mid 1920s Dole Pineapple Company sponsored contest of pineapple recipes. They received over 2,500 various submissions for the inverted pineapple cake and ran an advertisement about it, which increased the cake's popularity.

PINEAPPLE UPSIDE DOWN

INGREDIENTS

For the topping

* 75g of melted butter

* 1/3 cup of brown sugar

* 1 pineapple

* Glace cherries



For the cake

125g of softened butter

3/4 cup of brown sugar

2 eggs

1/2 cup of flour

1 1/4 cup of self raising flour

1 teaspoon of vanilla extract



DIRECTION

FOR THE PINEAPPLE RING

For the topping you have to first make pineapple rings.

* Twist the crown of the pineapple off and peel the pineapple.

* Slice the pineapple in circles (a picture of the pineapple ring is shown below.)

* Use a cookie cutter to cut the middle of each pineapple slice.

* Check each pineapple ring and trim the edges making sure to remove every rind.

FOR THE  TOPPING 

* In a bowl combine the brown sugar and the butter. Beat it till it has a nice texture.

* Glace the cake pan with a cooking spray, then pour the butter brown sugar mixture into the pan and spread evenly.

* Place each pineapple ring on the butter brown sugar mixture, covering it totally.

* Place the cherries in the middle of each pineapple ring.




FOR THE CAKE.

* In  a bowl add the softened butter and brown sugar and whisk till you get a nice texture.

* Add the eggs and whisk thoroughly

* Add the vanilla extract and mix

* Add the flours and mix thoroughly.

* Pour the batter into the pan with the pineapple rings and spread evenly.

* Bake for 30 mins ( * to know if the cake is fully baked deep a toothpick in the center of the cake, if it comes out dry then it is fully baked.)

* Flip the cake upside down and your pineapple upside down cake is ready to be served.
