SONHO DOUGHNUT
Sonho are Portuguese Doughnuts, also known as Sonhos (dreams), are light and airy doughnuts that are coated in white sugar.Sonhos are orbs of fried dough that are similar to choux pastry or cream puffs yet easier to make. Crisp on the outside, airy on the inside, and with the perfect sweetness from a quick roll through cinnamon sugar.

Ingredients
* 1 cup of water
* 1/4 cup of (1/2 stick) butter
* 1 tablespoon granulated white sugar
* 1 cup all purpose flour
* 4 large eggs
* 1/2 teaspoon lemon extract
* A pinch of salt
* Canola oil and vegetable oil for frying
* Granulated white sugar or cinnamon sugar.
Direction
* In a medium nonstick pan, combine the water,butter and sugar. Bring to a boil, then turn off the heat and add the flour. Stir until the mixture is nice and thick without any lumps. Move the batter to a bowl and let it cool.
* Use an electric mixer to beat the eggs into batter, one at a time. Note that when you add in one egg let it mix properly before adding another egg.
* Add lemon extract and a pinch of salt then mix thoroughly.
* in a medium pot add in the canola oil or vegetable oil and let it heat on the fire.
* Add in the doughnut batter into the hot oil by using a tablespoon to scoop out some of the batter and use another tablespoon to remove the batter from the spoon thereby putting it in the hot oil.
* Fry until they are golden brown.
*. Remove and with a paper towels to drain the excess oil.
* Roll in the doughnut in sugar and your Sonho doughnut is ready be served.
